2025 Pinot Noir Rosé
Made with organically farmed grapes from our Estate block 4, Roederer selection, and block 7 Dijon 777 clone. Whole clusters gently macerated while filling the press and held four hours to extract color and flavors from the skin and herbal notes from the stems. Fermentation started in a stainless-steel tank and racked one third through fermentation to neutral 500 L puncheons. Stirred on the lees until primary fermentation completed adding roundness on the palate. No malolactic fermentation to preserve fresh fruit flavors.
Exudes essences of buttercups, fresh strawberries, and sliced cucumbers. Full on the palate with lively mouth-watering acidity, showing flavors of watermelon, strawberries, lime, and wet stone. Refreshing with restrained alcohol but plenty of fruit focused by a crisp finish.
