The 2016 vintage was marked by heavy winter and late spring rains bringing an end to successive years of drought. While good for the grapes, it made it difficult to enter the vineyard to perform essential tasks. We persevered and were rewarded with a bountiful harvest. Ten years have passed since the last time we made a sparkling rose in 2006. The grapes for this sparkling rose originated from our CCOF Organic Certified winery estate vineyard. We sourced Pinot Noir (70%) from block 7 and Chardonnay (30%) for this blend. Beneath its pale salmon color lies a rich fruit forward sparkler. This wine shows an elegant bouquet of fresh baked dinner rolls, rose petals, and fresh pressed linens. It excites the palate with bright flavors of raspberries, strawberries and cream, kiwi, and a hint of lemon lime. The effervescence is delicate, fine, and long lived. The wine is round and full in the mouth finishing dry, crisp, and cleansing. Cases produced 505, Residual sugar 2.9g/L, pH 3.2, TA 7.2 g/L, alcohol 12.5%.
